SAUSAGE AND BEANS
This rustic, tasty dish is certainly a hearty comfort dish. During these cold winter days, we need something to give us energy and warming. Grab a nice rustic white loaf of bread, and try this very simple dish!
500g tuscan sausages
50ml red wine
Salt & pepper to taste
200g Beans of choice – dried(which need to be soaked over night) or in a tin/jar
500g tomato passata
Rosemary to taste
- To prepare sausage and beans begin by pouring drained beans into a large saucepan, cover with cold water and bring to a boil, then lower the heat to simmer and cook for about 30 minutes if using dried beans. If using canned/jarred beans, simmer for 5 minutes; salt beans just after cooking, otherwise the skins become tough.
- Meanwhile peel an onion and chop with a knife, then pour into the pan with the olive oil and cook on low heat for 6-7 minutes. Then add the sausage and let cook for 3-4 minutes, stirring occasionally so as not to burn the bottom. Pour the wine.
- When the alcohol has evaporated, add a pinch of rosemary and the tomato passata. Season with salt and pepper and cook for 35-40 minutes on low heat.
- After the indicated time drain the cooked beans and add to the sauce continue cooking for another 10-15 minutes, leaving blend the flavors. At this point your sausage and beans dish is ready, you just need to serve!
