Calamarata is part of the family of straight cut pasta shapes and is about half of the size of the ‘Paccheri’ pasta. Its name comes from the shape of the squid ring to which it resembles. The best condiment is certainly with fish based sauces: a squid stew or a sauce with many seafood.

The drying process is slow at a low temperature as it is the most delicate phase requiring maximum attention. The temperature notably affects both the taste and protein content, therefore, the process ensures a high nutritional value, the flavor of the product and causes the pasta to maintain a high quality performance during and after cooking.
