The Eucalyptus honey is produced primarily from two different plant species: the Eucalyptus camaldulensis (which blooms in July-August) and Eucalyptus occidentals (which blooms in September). The honey produced in the summer turns out to be lighter in color and has more delicate flavor while the one produced in September is more pronounced. The eucalyptus honey is a very aromatic honey with intense aroma reminiscent of liquorice. The crystallization is fine and compact, very pleasing to the palate.
