Parmigiano Reggiano is produced according to DOP standards, a quality check guaranteed by the local consortium. Castelli produces Reggiano in a dairy situated in the province of Reggio Emila. Production of this cheese, probably the most famous and well known in the world, begins with cows that produce only the best milk. Once the cheese is made, it is matured for over 30 months – one of the longest maturations for its category.
