Pasta di Martino Trofie is a local cut originating in Liguria and gets its name from the dialect verb “strofissià”. This means ‘to stroke’, which recalls the action of the hands in making this type of pasta.
Di Martino has been making pasta for over 500 years, so they know what they are doing. They have been awarded the Protected Geographical Indication (PGI), the first quality Community award awarded in Italy
