Chickpea Flour (Farina di Ceci) – this fine, pale yellow flour is made, as its name suggests, from ground chickpeas, and is widely used in Italian cooking especially for pancakes, breads and fritters.
Farina di Ceci should not to be confused with Indian “chickpea” flour or gram flour which is actually made from chana dal lentils, not chickpeas and gives very different results.
